Saffron Eclairs For Diwali

It’s Diwali today. The day when light conquers all.  The day when Rama and Sita returned home after having defeated the evil Ravan.  A day when you truly feel that you can conquer anything.

This year has had its challenges but I think we have indeed conquered most.  We head into the new Hindu year on a new path.  I hope it will bring prosperity (we forgot to honour our Goddess Laxmi yesterday on Dhanteras so here’s hoping she’s in a forgiving mood!).  More importantly I hope it continues to bring simple pleasures.  Simple things that make us all smile.  Apple Crumble.  Wood fires. The little robin at the allotment.  Warm pyjamas from the radiator.

We live a little far from Indian grocers and sweetmarts and were not organised enough to buy our Diwali treats last weekend.  We shall therefore save the penda, the chocolate barfi and the chakri for a Sunday feast.  Today we shall treat ourselves to these very simple, very easy Saffron Eclairs as an alternative sweet treat.

Saffron Eclairs

Saffron eclairs

Saffron Eclairs

You'll need
  • 50g butter
  • 75g plain flour
  • 2 large eggs
  • 300ml double or whipping cream
  • 100g white chocolate finely chopped
  • Saffron or saffron liquid.  I used both.  The liquid was from Holy Lama Spice Drops.
To make them
  1. Preheat the oven to 220°C and grease a large baking tray.
  2. Beat the eggs together and set aside.
  3. Sift the flour and set aside on a piece of paper.
  4. Put the butter in a pan with 150ml water and heat until the butter melts.
  5. Bring the mixture to the boil and then tip in the flour.
  6. Take the pan off the heat and then mix vigorously with a wooden spoon til you get a smooth paste.
  7. Pop the pan to the heat, stirring all the time to let the mixture dry out a little.  Keep stirring til it comes  clean away from the edges of the pan and forms a bit of a ball shape.
  8. Remove the pan from the heat again and then plop the mixture into a bowl to cool.
  9. Gradually add the eggs a little at a time, beating really well between each addition until the mixture is smooth and glossy.  You might not need all the eggs.  The mixture should just dollop from the spoon.
  10. Spoon the mixture into a large piping bag fitted with a 1cm plain nozzle.
  11. Spray the baking paper with some water - a fine mist - and then pipe the mixture on to the sheet in lengths, leaving room between each one.
  12. Bake for 10 minutes, then turn the heat down to 190°C and bake for a further 20 minutes.
  13. Transfer the baked eclairs on to a wire rack to cool completely.
  14. Meanwhile, whip the cream and add a few drops of the saffron liquid to suit your taste.
  15. Melt the chocolate in a heatproof bowl over a pan of boiling water.
  16. Leave to cool and then stir in some strands of saffron.
  17. When your eclairs are cool, put the whipped cream into a piping bag, make a couple of holes on the base of the eclair and then pipe a generous amount into each one.
  18. Dip the top in the saffron flavoured white chocolate and leave to set.
These are lovely with some chai and equally good with coffee.

    These sound delicious – such pastry treats are hard to find here, as cakes and tortes are preferred. A simple thing that makes me smile? My breakfast! Coffee, and fruit cut into little pieces and placed on a pretty plate! Have a fun feast at the weekend!

      Ah yes. Breakfast on my own in peace and quiet makes me smile too. Doesn’t happen often but when it does it’s soooo nice

      Thank you. When I looked the flavour up in The Flavour Thesaurus it is paired with orange and also pistachio. So an orange cream or pistachio cream would work well in these too. I just loved the whole saffron thing. Perfumed my kitchen. Lovely

    This is such a great flavour to use, saffron eclairs must taste amazing and I would happily enjoy these along with a few Indian sweet treats which I hope you get to enjoy this weekend for Diwali.

      It is a great flavour. The drops ate hood because they bakance the bitterness you sometimes get when you use too much saffron

    Love the appearance of these but can’t imagine in my head how the saffron icing tastes. It’s one of those flavours I seldom think to incorporate in my cooking. I should as mum bought me some good quality saffron from some recent holiday or other!

      Ive struggled with it except as a garnish in shrikhand or indian sweets but have used it in tagines etc now too. The spice drops are good too as they help with how much to use you can drop mix and try without thinking poof! Ive just used about £15 worth of strands
