Saturday Spotlight : Stoats Porridge

It’s getting decidedly chilly in North London.  Oh yes it starts off all sunny and warm through the window but as soon as I open that kitchen door in the morning it’s a little bit nippy.  Porridge is what that signals.  Porridge.

There are a myriad of different types of grains or cereals you can use to make porridge but I mainly eat is oats.  I was recently sent some Stoats Porridge Oats to try.

Scottish Founders with a mission to take porridge to the people

The business was founded by Tony and Bob and originally operated on the festival circuit out of a trailer – The Stoats Porridge Bar.  They did very well but because of the name, people expected porridge bars.  So the team developed the world’s first porridge snack bars.  I was sent some of these too and I must admit that they’ve come in handy in the boot of the car and the desk drawer at work.  Not for breakfast I might add but for a snackette in traffic or in a back to back meeting filled day.

I much prefer the breakfast cereal.   I received the Sunflower and Poppy Seed and the Apple and Cinnamon.  I had the first one every day with different toppings.

The oats are thin and rolled and so this is a quick cook porridge ready in the microwave in 2 minutes.  If you prefer it on the stove it takes about 5-8 minutes. I have concluded my favourite topping is mango with a sprinkling of extra sunflower seeds and a drizzling of orange olive oil.  You can find some more inspiration on my porridge pinterest board.

I don’t really like flavoured porridge oats and so I used the Apple and Cinnamon as a topping for crumble and made a batch of incredibly unhealthy porridge bars of my own otherwise know as flapjacks! They were really rather lovely with a dollop of Greek style yoghurt in the morning.

Apple and Cinnamon Flapjacks with stoats porridge

Apple and Cinnamon Flapjacks with Stoats Porridge

You'll need

  • 180g soft unsalted butter
  • 180g golden syrup
  •  180g muscovado sugar
  • 400g Apple and Cinnamon Porridge Oats

To make them - about 16 squares

  1. Preheat the oven to 150C and line a 20cm baking tin with greaseproof paper.
  2. Melt the butter in a medium pan over a low heat.
  3. Add the golden syrup and sugar to the butter and heat gently. Once the sugar is dissolved and the butter is melted, take the pan off the heat and stir in the porridge oats.
  4. Pack the mixture into the baking tin and squash down with the back of a wooden spoon.
  5. Bake for 40 minutes.
  6. Remove from the oven, leave to cool for 15 minutes, then turn out on to a chopping board and cut into squares.

What’s your favourite way to eat porridge oats?

I love oats in all forms, porridge, in cookies, flapjacks. And your flapjacks look very tasty indeed. Now here’s a question do you stir your porridge with a spurtle?!

Ha! No I didn’t! I usually shove it in the microwave and press the button!

I love a good bowl of porridge. My favourite way to have it is cooked over a campfire 🙂 Thank you for linking up to my porridge story – I’ll have to go and edit it though! I lost all the image links when I transferred from Blogger to WordPress last April and haven’t replaced them yet! 🙂

I don’t understand why companies make flavoured oats. It’s so easy to personalise a porridge.

I really love flapjacks. They remind me of being a kid.

I’d never eaten them until I started baking in adulthood. I hope they remind my girls of being little too.

I agree about flavoured oats though I thinkone of the things about them is they make it easy to have some kind of variety on those days when oyu need to make instant oats, but as you say it is easy to personalise and like you I enjoy experimenting

Me too. A decadent treat. I love Sally’s raw version recently at my custard pie. Much less decadence but I think still the taste

I thought that too but I don’t like some of the sugary stuff that goes in to make the flavours. These particular ones are quite good with that side of thing but honestly 100% oats is best

I love the idea of turning the oats into flapjacks… especially as porridge is one of the few foods I just can’t bring myself to eat.

Really? To be honest it’s a new thing for me too as I had always assumed oats were for flapjacks and porridge was basically ready brek!

Sorry for the late commenting! I love porridge, although growing up in the US we had it with – wait for this – butter. I didn’t take me long to get out of that habit and embellish with a healthier fat – almond butter! These flapjacks do look deliciously decadent, and very, very sticky. I shouldn’t be reading this on a fast day! PS thanks for finding my own porridge recipe. I had a bowl just last week. IT’s also nice with grated beetroot, if a bit odd looking.
